Soft Sugar Cookies - my favorite sugar cookie recipe. Great for the holidays! Butter, sugar, eggs, vanilla, almond extract, baking powder, salt, flour and sprinkles. Can change the sprinkles according to the holidays and team colors. SO good! I could eat the whole batch!
Preheat oven to 400ºF. Set the sprinkles into a small bowl. Set aside.
In a large mixing bowl, beat the butter and sugar with an electric mixer on high speed until fluffy. Add the eggs, vanilla and almond extract. Beat until mixed. Add the baking powder and salt and beat until mixed. Add the flour and beat on medium speed until mixed well.
Roll the dough into 1½ inch balls, then roll each ball in the sprinkles to cover the top of the cookie. Place two inches apart on ungreased cookie sheets.
Bake 10 minutes or until edges are golden brown. Allow to cool 2 minutes before removing from cookie sheets and setting onto wire racks to cool completely.
Notes:
You can use any color sprinkles you like.
Don't want sprinkles? You can leave them off.
Can Soft Sugar Cookies be frozen? Yes! You can freeze the baked cookies or the unbaked cookie dough.
To freeze the cookie dough, scoop the dough into balls and placing them on a cookie sheet, and freeze. Once the dough is frozen, transfer the balls to a freezer bag.
When ready to bake, partially thaw the cookie dough and roll in the sprinkles. Bake as directed below.
If your dough is partially frozen, you may need to add a few minutes to the cooking time.
